問：李大夫，素食比較濕重和寒涼，會否是多吃了某樣素食而導致身心失衡的徵狀呢？ 不如請您抽個空，給我們解說一下，何謂濕重？何謂寒涼？勞煩您解說我們身心的疑惑。

李大夫答：對於素食的一些誤解，當然有不少，因為認為素食「濕重」和「寒涼」，這些都好像是中醫的術語，所以有必要澄清一下。

食物的寒熱不等於身體的寒熱
第一個概念要澄清的，食物的寒熱屬性，不一定「吃得多」之後，你身體就變成食物的那樣。就是說吃得多寒涼食物，身體不一定就會寒涼。身體的偏寒偏熱體質，飲食只是其中一方面的因素，除此之外，情志因素、生活習慣、先天體質、四時氣候、生活環境等等，都有影響，我們不能將身體的寒熱偏頗簡單「怪罪」於食物。

另一方面，很多時候吃素的人體質偏於寒涼，本身就是因為他吃素以前就偏於寒涼，因此吃一些平和的食物，身體都會偏於寒涼。素食也就是如此，有些人在轉向素食的時候，身體本身就是處於疾病的狀態，希望以素食來調養自己，於是吃素的時候出現問題，就跟許多因素有關了。

還有，也不見得吃肉的人身體就不會寒涼，從臨床一般觀察，假如一個病人體質寒涼，中醫不可能直接歸咎于就是「素食」讓你這樣，而是會跟上述各種因素有關係。

素食非寒涼，寒熱分程度
進深一點說，認為素食比較「濕重」和寒涼，其實中醫是沒有這種理論的。

先說素食「寒涼」的說法，素食的食物裏面，的確有比較寒涼的，例如蔬菜裡頭，苦瓜、西芹是相對寒涼一點的，水果裏面西瓜、雪梨是比較寒的。但是素食也有溫熱的食物啊，例如不少調味料的生薑、辣椒，又或者水果裡頭荔枝、龍眼都是，大家都知道啊。而且應該說，大部份素食都是比較平和的，就是不熱不寒，寒熱平衡，是最適合我們平常天天食用的。我們怎樣可以「一支竹竿打一船人」，只是有少部份素食寒涼，就說全部「素食」都寒涼呢？

我們要有一個概念，寒涼溫熱是有程度之分。假設以一條線來比喻，0分是最寒，1分就是最熱，那麼中間的0.5分就是寒熱平衡的話：

大部份食物，其實都是在中間0.5，就是說稱得上食物，能夠給我們每天吃的，一般都是比較平和的，寒熱平衡的。即使有一些寒熱的偏性，食物的寒熱不會太過極端，例如大約在0.7熱或者0.3寒的程度。假如是到了0寒1熱的程度，這肯定不可以叫作食物，而叫做藥物。這是中醫對於寒熱的理解。

中醫裏沒有「濕重」的食物？
關於「濕重」，中醫本身沒有這種術語。不過中醫有時會說「濕氣較重」、「寒濕、濕熱較重」等，但是要注意的是，這些「濕氣較重」的術語，一般是指體質狀況或者疾病的診斷，而不是指食物的屬性。

一般來說，認為素食「濕重」，是指素食比較寒涼，而中醫認為寒涼容易「留濕」，就好像結冰那樣，有寒氣就會讓身體的水凝結成濕氣。的確，體質較濕的人不宜多吃寒涼食品，但素食不是一定就寒涼，這點上面已經說過。而且，更加準確的說，其實寒熱偏性比較極端的食品，普通人都不宜多吃，正常飲食應該多吃平性的食物。

除了寒涼食物容易「留濕」之外，油膩煎炸的食物也會容易留濕，還有一些粘滯的食物容易也容易留濕，例如糯米、一些蕨菜、一些魚類等，粘滯其實廣義來說，是指難消化的食物，容易傷脾胃，因此容易留濕。

還有沒有甚麼食物本身是比較「濕」的呢？也有，一般是指一些生長在陰暗潮濕環境的食物，主要是菌類（菰）。所以中國人傳統上多吃曬乾了的冬菇，就是希望以陽光去除濕氣，的確是有一些智慧的。所以體質偏濕的人適宜少吃菌類。除此之外，直接是屬於「濕」的食物，其實不多。

吃芒果很濕熱？
舉例說，有些人認為吃「芒果」是比較濕熱，但其實芒果不是濕熱的，而是健脾益氣的，沒有「濕」的問題，但是為甚麼有些人認為它濕熱呢？這需要用醫理去理解。因為芒果補氣，稍為偏於溫性，假如體質本身有濕或者濕熱的人吃了補氣的藥物或者食物，就會容易化熱了，就產生濕熱。所以吃芒果之後濕熱，這不是芒果本身的問題，而是體質本身不適合的問題，千萬別怪罪芒果了。

其實各種食物也是如此，例如剛才說香菇比較濕，但是假如體質本身比較「乾」燥的人，缺乏滋潤的人，那麼多吃「濕」的食物是沒有問題的。中醫認為各種食物藥物都有其特性，用得對的話就對身體好，用得不對就反而有害，所謂水能覆舟亦能載舟，就是如此。

很多人總是有一種誤解，認為生吃食物就會寒涼，煮熟就不會了，這顯然是一種憑空想象。

中醫上食物分寒熱食指食物的特性本身，例如說西瓜寒涼，難道煮過就不寒涼了嗎？如果經過火煮過就不寒了，那麼各種寒涼中藥都不可以煎煮了，煮了就沒用。這當然不是了。

更直接的證明，中藥使用的過程，有不少情況也是「生吃」的，例如將中藥材磨成粉，或者製成丸藥等，都可以不經過煎煮，難道這樣就寒涼傷胃了嗎？當然也不是了。

中醫上所謂「生冷」的食物，重點是講冷，吃冰凍的食物容易傷胃。而「生」的重點是指，要煮熟吃的食物沒有煮熟，例如吃肉、米飯，都必須要煮熟，不然也會傷胃。但是本身應該生吃的蔬菜水果，卻拿去煮熟了，這反而可以傷身。尤其是水果本身就在樹上熟了，不應該再煮。

總之，生吃蔬果本身並非寒涼，每種蔬果都有寒熱之性不同，不因生吃就會寒涼傷胃。中醫認為胃腸的功能是「腐熟食物」，只是如果你腸胃本身寒涼了，胃腸就無法弄「熟」食物了，那你就未必有能力消化正常的食物，必須要依賴熟食，來代替腸胃的功能了。

屎尿肥料是有機蔬菜? 生食蔬菜?

甚麼是有機蔬菜

就是古時候的人吃的蔬菜。多古的時候？就台灣而言，清朝、明朝、宋朝以及更早以前，當然都是古時候。而二次大戰結束後，國民黨統治台灣的初期，百廢待舉，那 時全台灣絕大部分的農民，也沒錢買農藥或化學肥料，施肥全部用屎、尿，這段時期，台灣人吃的也幾乎全是有機蔬菜。

民國二、三、四十年代出生的人，小時候吃 的都是沃屎、尿的有機蔬菜。有比較營養？比較好吃嗎？比較營養嗎？ 

回答：沒有。倒是比較容易生迴蟲。

因此，那年代，晚上到各鄉鎮，在路邊打拳頭賣膏藥，或演地攤戲賣成藥的，所賣的最大宗藥，就是 迴蟲藥。吃有機蔬菜的那個「古時候」。
兒童和成人，有比現代人健康嗎？運動體力與耐力有比現代人強嗎？全體國民平均壽命有比現在長嗎？沒有一項的答案是「有」。

台灣大學園藝系教授鄭正勇表示，生食蔬菜，其實有頗高的風險，蔬菜若經過清洗、煮熟，令人擔心的問題幾乎均可消除，一旦採用生食，必須格外注意食材的來源及清洗、製程等衛生問題。

被土壤中的寄生蟲與蟲卵汙染的菜葉，這種有機蔬菜 絕對不可以生食。台灣田間有許多非洲大蝸牛、田螺，都是廣東住血線蟲的中間宿主，只要被這些蝸牛爬過，就會在蔬果上留下含有 廣東住血線蟲的黏液，一旦經生食進入人體，就會穿過腸胃道，到達循環系統、中樞系統，造成腦部病變，死者的腦組織內還可檢出蟲體。

中國醫藥大學附設醫院感染科主任王任賢指出，廣東住血線蟲主要是從口腔進入人體導致腦膜炎。20多年前，金蘭醬油董事長鍾秋桂家族誤信偏方生吃蝸牛，造成全家三代九人染病，兩人死亡；台中市也有一家6口 因母親罹癌發願吃素，生吃後院自種的有機蔬菜，不料蔬菜被非洲大蝸牛爬過，帶有廣東住血線蟲而引發腦膜炎。近年大家強調有機蔬菜不噴農藥最健康，「但這些 種在戶外的蔬菜，可能因為被蝸牛爬過，遭殘留的寄生蟲污染，若生吃下肚，極易致病。」他指出，光是清洗蔬菜，並不能保證可完全去除寄生蟲卵，防杜感染的唯 一途徑是「勤洗手、吃熟食」。
